Junmai Koshu
(vintage sake) is an extremely rare artisanal product.  It is made from special rice, pure water and yeast.  Only one percent of total sake production attains this quality level - exactly the proportion of Burgundy that is rated grand cru.  Like great Burgundy, Junmai Koshu is full of complexity.  Tasting notes include leesy, toasty, floral, honeyed, herbal, almondy associations.  Drinking it can be a profoundly stimulating experience.  Don't even think about heating it.  Would you heat a glass of Corton-Charlemagne?  Served cool, it is amazingly versatile with food.
