Japanese Sake brewery located in Akaiwa region of Okayama Prefecture. The Toshimori Shuzo (Sake brewery) makes Bizen Sake from the original Sake rice variety, "Akaiwa Omachi", which once became extinct. The brewery revived it in 1983 as its own locally grown Sake rice variety.
Bizen Junmai (Pure-Rice) Ginjo Premium Sake is "all natural" and made from the finest rice and the select rice-yeast. It contains no added alcohol, flavoring agents and preservatives. It's unique aroma and rich flavor are attained by a low rice-milling-rate of 55% and a longer and lower-temperature fermentation technique known as "Ginjo (ghinn-joe)."
