This product is made from a rare and heirloom rice variety known as " Akaiwa Omachi" grown organically in the brewery' own rice field in Okayama, Japan. The sake is aged in large earthen-ware until bottled. The aged sake is called KOSHU. Each KOSHU has its own unique and complex character and pairs well with foods with generous use of sauces and spices. Tasting reviews by Mr. Mark Davidson (Vancouver Wine Academy).

  • 1994 JUNMAI-DAIGINJO KOSHU
    Pure-Rice Super Premium Aged Sake
    Rice Milling Rate - 50%
    Rice Variety - Akaiwa Omachi
    Alcohol Content - 15.9%
    Clear, bright lemon/gold colour
    Quite pronounced and aromatic. Very appealing aromas of almonds, bread dough and bisquits. Rich, full-bodied and spicy with a distinct licorice flavour. Long, rich and nutty finish. Very complex and appealing.

  • 1996 JUNMAI KOSHU
    Pure-Rice Aged Sake
    Rice Milling Rate - 60%
    Rice Variety - Akaiwa Omachi
    Alcohol Content - 13.9%
    Clear pale yellow colour.
    More subdued nose but the almond nuttiness still comes through and quite reminiscent of an aged Pinot Gris from Alsace. Some definite sweetness here but balanced by a decent backbone of acidity. More expressive on the palate with flavours of baked apple, dried fruit, almonds and earthiness. Not as complex as the 1994 but has a nice fruity charm of its own.

  • 2001 JUNMAI ZEN-KOJI KOSHU
    Pure-Rice All Koji Aged Sake
    Rice Milling Rate - 60%
    Rice Variety - Akaiwa Omachi
    Alcohol Content - 16.9%
    Slightly hazy, golden colour.
    Very unique nose. Hard to describe. Very savory and spicy with a curious beef stock aroma. Quite different on the palate. Full, rich and intense with yeasty flavours initially. Very long and complex finish that reveals layers of savory character. Roasted nuts, white truffles and spice. This is very good.
